Chef Norm’s “Beat The Heat” Cocktail
- ½ cup of Coconut Water
- 2 ½ cups of seedless watermelon, small cubes
- ½ cup granulated white sugar
- 4 strips orange zest
- 1 cup Tequila
- ¼ cup lime juice
- 1 lime cut into wedges
- 1 tablespoon of Sweetened Coconut Flakes
- Crushed Ice, as needed
- Pinch of salt for rimming the glasses (or sugar)
In a saucepan, add the coconut water, sugar & orange zest & bring mixture to a boil, while stirring frequently. Allow to simmer for a few minutes, remove from heat & let the mixture completely cool down.
Puree the cubed watermelon in a blender.
Pour the pureed watermelon into a large pitcher, then add the sugar/coconut water mixture, tequila & lime juice.
Rim the glass with a tiny bit of salt, or some sugar. Add the beverage to the glass, garnish with a lime wedge and sprinkle some coconut flakes to top off your beverage. Enjoy!
