Chef Norm’s Chicken Breasts
A healthy choice for the New Year! This recipe is a great way to start your New Year’s Resolution, if your resolution is the same as mine.
- 1 medium thick (boneless & skinless) chicken breast
- 1 large ripe tomato-diced
- 1 small red onion-diced
- 1 tablespoon of small capers
- Pinch of garlic powder
- Pinch of Mrs. Dash (or black pepper)
- 2 tablespoons of Balsamic Vinegar
- 2 tablespoons Olive Oil
- 4 tablespoons of water
Take a piece of Aluminum foil, large enough to fit the Chicken Breast in the center of the foil, making sure that you can lift the sides of the foil to seal and bake the Chicken with all of the ingredients covering the breast. Pre-heat the oven at 350 degrees. Place the chicken in the pre-heated oven on a baking sheet. Make sure the aluminum foil is completely sealed, but not tightly wrapped around the chicken. Bake for about 30 minutes, depending on your oven.
This chicken dish is great over brown rice!
