Chef Norm’s Honey Shrimp with Candied Walnuts

Honey Shrimp with Candied Walnuts

1 cup of water

½ cup of walnut halves

4 egg whites

2/3 cup of white sugar

2/3 cup of rice flour

1/3 cup mayonnaise

1 pound of peeled & deveined shrimp (13/15 count)

2 tablespoons of sweetened condensed milk

3 tablespoons of honey

1 cup of vegetable oil-the oil is for frying the shrimp.

 

Directions:

In a saucepan, mix the water & sugar until the mixture starts to boil, then add the walnuts.  Continue to boil for another 2-3 minutes & then drain the cooked walnuts and dry them on a flat surface for a few minutes.

In a bowl, whip the egg whites until they foam.  Then mix in the rice flour to make a batter coating for the shrimp.  Heat the oil in a pan over medium heat.  When the oil is hot enough, dip the shrimp into the batter & fry the shrimp until they are golden brown.  When you remove the shrimp, place the shrimp on paper towels to dry off the moisture.

In another bowl, mix the mayonnaise, condensed milk & honey.  Then toss the shrimp into this sauce mixture.  Plate the shrimp & top off with the candied walnuts.  You can also add some Honeydew melon balls to the finished plate.
