Chef Norm’s Vodka Sauce


  • ½ cup olive oil
  • 1 jumbo onion-diced
  • 1 pound package of bacon cooked & diced, save the bacon fat drippings
  • 18 oz. can of Hunts tomato sauce
  • 18 oz. can of Hunts diced tomatoes
  • 6oz. can of Hunts tomato paste
  • 1 cup water
  • ¼ cup of sugar-if you like a sweeter sauce, you can add more sugar afterwards
  • 1 pint heavy cream
  • ¾ cup Vodka
  • Salt, pepper, garlic powder (to taste), you can always add more
  • 5-8 bay leaves, whole
  • ½ cup grated parmesan cheese
  • 2 heaping tablespoons of basil
  • 2 tablespoons dry oregano


In a large sauce pot, sauté the diced onion in the olive oil until lightly golden. On a low flame, add the sauce, crushed tomatoes, tomato paste, water, diced bacon, bacon drippings, parmesan cheese, sugar, basil & bay leaves. Stir continuously while adding salt, pepper, garlic powder, oregano & Vodka. When the sauce starts to boil, add the heavy cream.
